sweet potato soufflé

nanny’s recipe (we always leave a corner with no topping because nanny cant eat nuts)

 1lb cubed sweet potatoes

1 cup sugar

2 eggs

3/4 cup milk

1/4 stick margarine

1 tsp vanilla

dash of salt

pre heat over to 350 degrees.  dice sweet potatoes into cubes and boil until soft.  drain potatoes and place in mixer with butter. beat well.  add sugar and eggs and beat until mixed.  add all other ingredients and mix until all ingredients are incorporated.  place is baking dish.

topping

1 cup light brown sugar

1/4 cup flour

1/4 stick melted margarine

1 cup chopped pecans

mix all ingredients together until it makes a crumbly mixture.  sprinkle on top of sweet potatoes in dish.  bake dish for 45 minutes.
