mexican corn bread

grandmother june’s recipe


1 cup flour

1 cup cornmeal

1 tbsp baking powder

1/2 vegetable oil

2 eggs

6 tbsp butter

1 cup buttermilk

1 can sweet golden corn

salt and pepper to taste

1 jalapeño

1 cup cheddar cheese

1/4 cup parmesan cheese

preheat oven to 400.  in big bowl, mix flour, cornmeal, baking powder and salt and pepper.  in another bowl, mix melting butter, eggs, oil, and buttermilk.  pour wet mixture into dry mixture and stir until fully mixed.  add can of corn, parmesan cheese, most of the chopped jalapeño,  and 3/4 cheddar cheese. incorporate into mixture.  spray cornbread skillet with cooking spray and pour mixture into skillet.  take remaining cheese and jalapeño pieces and sprinkle on top.  bake for 20 min or until golden brown.
