brown sugar salmon with broccoli orzo

brown sugar salmon:

2 salmon filets

1/2 red onion

3 tbsp brown sugar

1 tbsp butter

salt and pepper

2 tbsp oil

take salmon filet and place on a sheet of foil.  rub both sides with oil.  salt and pepper each side.  on top of salmon sprinkle brown sugar and onions.  cut butter into 4 small pieces and place on top   of the layered salmon.  take another piece of foil, and place on top (create a tunnel so the foil is not touching the top of the salmon  but is covering it entirely and so the heat from the grill can cook all around the salmon). i used an indoor grill because it was cold outside!  cook on grill for about 15min, until salmon is cooked through.

broccoli orzo:

1 broccoli crown

1 cup orzo

2 chopped green onions

1/4 cup chicken broth

3/4 cup parmesan cheese

salt and pepper

put orzo in sauce pan and fill with water until orzo is completely covered.  cook for about 20 min or until orzo is soft.  drain orzo and place back in sauce pan.  while orzo is cooking, boil broccoli crown until bright green.  drain broccoli and cut into bite size pieces.  add chicken broth to orzo and bring to a light boil, let orzo cook a bit longer to soak up the chicken broth.  once the orzo has become a creamy texture, add broccoli, green onions, and parmesan cheese.  place heat on low and mix well.  keep on stove until cheese is melted.  remove from heat and serve immediately.  orzo is a grain that cools very quickly so it is better serve right after cooking so it is still warm!

  1. Hi, Laura! Michael Davis here. Love the blog and this recipe in particular. I have similar ones for the salmon and orzo that I’ve been evolving over the last several months, too. Very close- great minds, I think!
