2 cans diced tomatos

1 cup plain greek yogurt

1 can veggie broth

1 chopped yellow onion

2 tbsp olive oil

2 cloves garlic

2 stalks of chopped celery

1 tbsp sugar

3 tbsp oregano

3/4 cheddar cheese

salt and pepper

1 tsp garlic powder

1 tsp red pepper

add olive oil and onions to medium heated sauce pan.  cook for about 5 min until the onion are translucent.  add garlic and celery and cook for anther 3 minutes.  add veggie broth and tomatoes (juice and all) to the onion celery mixture.  stir well and bring to a simmer.  add salt, pepper, sugar, oregano, garlic powder and red pepper.  mix and cover pot.  cook on a simmer for 15 min.  once complete, turn off heat and add cheese and yogurt.  stir until mixed well.  either use an emulation blender or food processor to blend the soup so it has a creamy consistency.  garnish with oregano and cheddar cheese to serve.

  1. yum this looks and sounds delicious! I like the addition of greek yogurt instead of cream. I’ll have to try this
