mom and dad’s recipe

Imagefavorite pizza dough (dad makes his homemade but i still don’t have that recipe!)

2 sliced tomatos

1/2 yellow onion sliced

1 cup mozzarella cheese

homemade pesto:

2 cups fresh basil leaves

1/2 cup grated parmesan cheese

1/2 cup extra virgin olive oil

1/3 cup pine nuts or walnuts

3 medium sized garlic cloves, minced

Salt and freshly ground black pepper to taste

too make pesto, combine the basil in with the pine nuts, pulse a few times in a food processor.  add the garlic, pulse a few times more.  slowly add the olive oil.  stop to scrape down the sides of the food processor with a rubber spatula. add the grated cheese and pulse again until blended. add a pinch of salt and freshly ground black pepper to taste.  once pesto is made, roll out pizza dough and spread pesto all over the dough, leaving a thin rim round the edge of the pizza. add 1/2 of the mozzarella cheese.  add tomatoes and onions on top of pesto and cheese.  sprinkle remaining cheese on top of pizza, including the edge.  bake on 425 degrees for 15 to 20 mins.
