butternut squash soup

my own recipe


1 large butternut squash peeled and chopped into cubes

1 purple onion chopped

1 tbsp sage

1 tbsp parsley

2 cups chicken broth

2 tsp olive oil

salt and pepper to taste

dollop of sour cream

add olive oil, onions, and squash to sauce pan.  cook for 10 minutes until onions are cooked through.  add sage, parsley, and broth. bring to a boil.  simmer for another 10 minutes covered squash is tender.  transfer mixture to food processor and puree mixture.  add back to sauce pan and keep on low heat.  serve with a dollop of sour cream on top!
