potato skins

my own recipe


6 russet potatoes

3 strips bacon (cooked very crispy)

1/2 cup cheddar cheese

2 green onions

1/2 cup sour cream

2 tbsp olive oil

salt and pepper to taste

wash potatoes clean then rub with olive oil and bake in a 400°F oven for about an hour until the potatoes are cooked.  when cooked and then cooled for a bit, slice potatoes in half and scoop out about 3/4 of the potato inside.  then sprinkle bacon, cheese, and green onions on top and bake on lower heat for about 10 more minutes or until cheese is melted.  serve with sour cream mixed with green onions for dipping sauce.
