seared tuna with wasabi sauce and veggie quinoa

the recipe for seared tuna was posted on Feb 22 2013.

veggie quinoa:

1 cup organic quinoa

3 squash sliced

1/2 cup broccoli florets

1/2 califlower florets

2 stems of green onion

2 cups chicken broth

1 tsp red pepper

1 tsp garlic powder

2 tbsp olive oil

salt and pepper to taste

preheart oven to 350.  sliced veggies (you can use any veggies you have on hand) into bite size pieces and place on baking pan.  pour olive oil, red pepper, and garlic powder on veggies and toss.  put veggies in oven and cook for about 20 minutes (you still want the veggies to have a little crunch to them).  meanwhile, bring chicken broth and quinoa to a boil then cover and simmer for 15 minutes.  once cooked, add cooked veggies and chopped green onion to mixture.  add salt and pepper as desired.

wasabi sauce:

1/4 cup plain all natural yogurt

2 tbsp lime juice

2 tbsp wasabi powder

dash of salt, pepper, and red pepper

mix all ingredients together in a bowl and pour over tuna.  keep the extra for dipping :)
