sweet potato black bean burger

1 can black beans, drained

3 cups cubed sweet potatoes

1/2 cups frozen or fresh corn

2/3 cups finely chopped onion

1 large garlic clove

1/2 cup cooked quinoa

6 tbsp rolled oats, partially ground

2 tbsp sunflower seeds

1 tsp red pepper

1 tsp parsley

1 tbsp olive oil

1 avocado

1 small tomato

english muffins

cook sweet potatoes in microwave for 10 minutes.  cook quinoa (bring quinoa and water to boil and then to a simmer for 15 minutes).  mash half of the beans in a bowl until paste-like.  add in sweet potatoes and mash with the beans.  add rest of beans, onion, garlic, corn, quinoa, sunflower seeds, ground oats and all spices to mixture and stir until combined well.  heat a skillet to medium heat and add olive oil.  form mixture into balls and then flatten in hands.  place in pan and cook on each side for 5 to 8 minutes depending on how big the patties are.  while patties are cooking cut avocado and tomato for toppings on the burgers.  toast english muffins (or any bread you prefer).  i topped mine with sour cream and my sister used honey mustard!  the patties are SO easy and you can really make them your own when putting them together!
