scalloped potatoes

mom’s recipe


6 russet potatoes, peeled and sliced thin

1 cup gruyere cheese, shredded

1 cup cheddar cheese, shredded

1/2 parmesan cheese

3/4 cup chicken broth

1/2 half and half

1 medium sweet onion, chopped finely

2 tbsp olive oil

2 tbsp flour

1/4 tsp nutmeg

1 tbsp salt

1 tbsp pepper

preheat oven to 450 degrees.  cook potato slices in boiling water until softened (10/15min).  you don’t want to cook the potatoes all the way because they will fall apart.  grease baking dish with butter.  in a bowl, mix onion and flour (this is so when we sauté the onion, it gets a nice texture to it) and sauté in a medium heated skillet in olive oil for about 10 minutes or until translucent.    toss cooked and chilled potatoes in salt, pepper and nutmeg.  layer potatoes in bottom of dish.  sprinkle with half of the sautéed onion and then with 1/2 cup gruyere and 1/2 cup cheddar.  repeat ending with a payer of potatoes on top.  in a measure cup, combine broth and half and half, and pour over the potatoes.  add parmesan and any remaining cheese on top.  bake uncovered for 15 minutes.  reduce oven to 350 degrees and bake for 1 hour (may take a little longer depending on oven).  enjoy!
