dill, tomato & onion couscous

1 cup organic couscous

1 tbsp olive oil

2 cups chicken broth

1/2 cup chopped tomato

1/2 cup chopped red onion

3 tbsp chopped fresh dill

1 tsp salt

1 tsp pepper

heat olive oil in sauce pan. stir in couscous and sauté for 1 minute. add chicken broth, salt and pepper. bring to a boil. stir in couscous, cover for about 3 minutes, remove from heat, and let stand 5 minutes. fluff with a fork. stir in tomatoes, onion, and dill.  super quick and easy.  the perfect side dish to any kind of fish!
