chicken caesar wrap

my own recipe


4 flatout light flatbreads

1 cup fresh spinach

4 chicken strips

4 pieces of bacon

1/4 cup or so of caesar dressing (i use ken’s reserve caesar)

2 tbsp chopped onion

2 tbsp cilantro

dash red pepper

salt and pepper

this recipe yields 2 wraps.

in a sauce pan, cook bacon under extra crispy.  place aside and let cool.  in the bacon grease, cook the chicken strips for about 5 minutes on both sides.  when you put the chicken strips in pan, sprinkle with salt and pepper and any other spices you would like (i used a dash of red pepper too to give it some heat!).  place chicken aside also and let cool. break chicken and bacon into pieces to place in the wrap. take one flatbread and spread half of the caesar dressing on it.  start building the wrap with 2 chicken strips, 2 strips of bacon (both broken into pieces), 1 tbsp chopped onion, 1/2 cup spinach, 1 tbsp cilantro, salt and pepper.  because the flatout flat breads are delicate, once i rolled the wrap, i wrapped it again in another wrap to keep it secure.  also, secure with toothpicks, cut in half and enjoy!  we took this for a picnic dinner with fruit salad!
