spicy lime shrimp

1 lb cooked shrimp

1 tbsp butter

1 tbsp olive oil

2 cloves garlic

1 medium onion, chopped

1 green bell pepper, chopped

1 jalapeño, chopped

1/4 tsp red pepper

1/2 tsp parsley

1 can diced tomatoes with oregano, drained

juice of 1 lime

1/2 tsp salt

1/2 tsp pepper

1 cup quinoa

2 cups water

add water and quinoa to a small pot, bring to a boil and then simmer covered for 15 minutes.  melt the butter and oil in a skillet over medium heat.  add garlic, onion, green pepper, and jalapeño and cook until onions begin to become translucent.  add red pepper, parsley, and tomatoes.  cook until tomatoes are soft. add cooked shrimp and lime juice.  remove from heat and serve over quinoa.  so flavorful and healthy!

    Looking at your lovely recipe I realized just now that I have not made shrimp for ages! But your recipe has inspired me to change that soon :-) Such a lovely weeknight meal.
