sausage and apple stuffed roasted chicken

dad’s recipe

stuffing:

1  tbsp olive oil

4 links of sweet italian sausage, casing removed

1/2 medium onion, chopped

2 tart apples, cored and chopped

1/4  cup chopped fresh sage

kosher salt and black pepper

chicken:

2 3lb whole chickens

1/4 cup bobby’s butt rub

1/4 melted butter

remove grill rack and preheat grill to medium heat.  to prepare stuffing, add olive oil to sauté pan and bring to medium heat.  add sausage and cook until done, about 5 minutes on each side.  remove from heat and add onion and apples to same pan.  cook until onions are somewhat translucent.  turn off heat.  chopped cooked sausage and add to apple and onion mixture, and stir in sage, salt and pepper.  set aside.  for chicken, place on baking dish and stuff with stuffing mixture from earlier.  pour melted butter over outside of both chickens and rub with the butt rub (my dad has is his rub but any butt rub will work).  place both chicken breast side up on the cooler portion of the grill. grill covered without turning for 1 1/2 hours or until meal thermometer registers 180 degrees.  remove from heat and let cool for about 10 minutes before cutting.  enjoy!

    I ADORE roast chicken (and i am not exaggerating here) and this stuffing just looks amazing! My mouth is watering just looking at that crisp skin!
