teriyaki chicken quinoa stir fry

my own recipe

teriyaki chicken:

8 thawed raw chicken tenders

3 tbsp brown sugar

1/4 cup teriyaki marinade

1 tsp minced garlic

2 tsp olive oil

1/4 package of stir fry seasoning

cut chicken tenders into cubes.  season with salt, pepper, and stir fry seasoning.  in a skillet over medium heat, add olive oil and garlic.  cook for about 2 minutes.  add brown sugar and teriyaki.  cook until brown sugar melts and creates a glaze.  add chicken, cook and stir constantly for about 10 minutes.  remove from heat and set aside.

stir fry:

2 cups uncooked quinoa

1 cup snap peas

1/2 cup corn

1/2 chopped green bell pepper

1/2 chopped red onion

 5 sprigs of chives

2 eggs

1/4 package of stir fry seasoning

2 tbsp olive oil

1/4 cup teriyaki sauce

chicken from above

cook quinoa per instructions on pouch.  in a wok over a hot stove, heat olive oil.  add two eggs and cook until scrambled.  add chopped onion and snap peas and cook for about 5 minutes until snap peas soften.  add quinoa and teriyaki sauce.  cook for about 10/15 minutes until the qunioa gets a nice sear on it.  add chicken, corn, chives, and stir fry seasoning.  cook for another 3/4 minutes to let flavors from the chicken marry with the quinoa.  enjoy this healthy and yummy dish!

    Fabulous for a quick weeknight dinner – I always love new ideas for using quinoa!

    • It definitely is!! I just used ingredients that I had on hand and came up with this! Quinoa is my new favorite so I will definitely be posting more recipes that include it!
