pimento cheese with pepper jelly

inspired by kevin’s grandmother’s recipe (for the pimento cheese)

1 8oz package of shredded cheddar cheese

1/4 cup light mayo

1 2oz jar of pimentos

3 tbsp sweet pickle juice

1/4 cup red pepper jelly

salt and pepper

in a bowl, mix together all ingredients above excluding the red pepper jelly, until mixed throughly.  place in refrigerator for 2 to 3 hours to let flavors marry.  when serving, i place cold pimento cheese in middle of the plate and top with pepper jelly.  serve with pita chips because they are stronger chips than most!
