2 cups unbleached all-purpose flour, plus more for dusting the board

1/4 tsp baking soda

1 tsp baking powder

1 tsp salt

6 tbsp unsalted butter, very cold

1/4 cup melted butter

1 cup buttermilk

1/4 to 1/2 pound sweet honey ham

preheat your oven to 450 degrees.  combine the dry ingredients in a bowl, or in the bowl of a food processor ( i used food processor).  cut the butter into chunks and add to food processor and pulse a few times until it resembles course meal.  add the buttermilk and mix just until combined (don’t over mix).  if it appears on the dry side, add a bit more buttermilk. turn the dough out onto a floured board or counter.  gently pat the dough out until it’s about 1/2″ thick (no rolling pin needed). fold the dough about 5 times, gently press the dough down to a 1/2 inch thick.  use a round cutter to cut into rounds (i used the top of a mini togo coffee cup because i wanted mini biscuits and that is the smallest shape i had!)  you can gently knead the scraps together and make a few more.  place the biscuits on a cookie sheet and put them touching each other so they will rise higher.  bake for about 10-12 minutes- the biscuits will be a beautiful light golden brown on top and bottom.  when done, take out of oven and gently brush melted butter over biscuits.  when biscuits cool, split in half and add a small amount of ham to each one to create mini ham biscuits.  enjoy!
