cake:

1 1/2 sticks unsalted butter, softened

1 1/2 cups granulated sugar

3 large eggs

1 1/2 teaspoons vanilla extract

1 1/4 cups sour cream

2 1/2 cups flour

2 teaspoons cinnamon

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

streusel:

1/2 cup brown sugar, packed

1/2 cup flour

3 teaspoons cinnamon

1/4 teaspoon salt

5 tablespoons cold unsalted butter, sliced

glaze:

1/2 cup powdered sugar

1 Tablespoon maple syrup

1 Tablespoon water

preheat the oven to 350 degrees. grease a bunt pan.  in the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about five minutes.  add the eggs one at a time mixing thoroughly after each addition.  mix in the vanilla and sour cream.  sift together the flour, cinnamon, baking powder, baking soda, and salt.  add the mixture to the wet ingredients and mix until just combined.

for the streusel, combine the brown sugar, flour, cinnamon, salt, and butter together in a bowl. pinch with your hands until crumbly.  spoon a third of the batter into the bottom of the pan, layer with a third of the streusel over the batter. layer another third of the batter in, followed by another third of the streusel. pour in the remaining batter and top with the remaining streusel. pop into the oven and bake for 45-50 minutes, until a toothpick inserted in the middle comes out clean.  allow it to cool for at least 30 minutes before transferring the cake, streusel side up onto a plate or stand.

for glaze, mix together the powdered sugar, syrup, and water and drizzle over the top of the cake.  enjoy!
