rosemary roasted new potatoes
my own recipe
1 1/2 pounds small new red potatoes, washed and dried
1/4 cup extra-virgin olive oil
4 sprigs fresh rosemary, take herb off the stem
3 tbsp bobby’s butt rub
salt and pepper to taste
preheat the oven to 400 degrees. in a large bowl mix the oil and 1/2 rosemary. add the potatoes and toss well, then add salt, pepper, and butt rub (you can use any kind you have or omit it). transfer the potatoes to a baking sheet and roast until potatoes are tender when tested with the tip of a knife, about 45 min. remove from oven and lightly smash each potato with a potato masher just so they lightly open up. place a small piece of rosemary on each potato. serve immediately and enjoy!
