my own recipe

2 cups uncooked couscous

2 cups chicken broth

1 tbsp butter

1 red bell pepper, chopped

1 orange bell pepper, chopped

1/2 medium onion, chopped

5 sprigs of green onion, chopped

3 tbsp lemon infused olive oil

1 tbsp balsamic vinegar

2 tsp dill

salt and pepper to taste

bring chicken broth and butter to a boil, with a dash of salt.  add couscous, stir well, then remove from heat and leave covered for 5 minutes.  after 5 minutes, fluff couscous with a fork.  add all chopped vegetables, olive oil, balsamic vinegar and seasonings (get creative!).  Place in refrigerator for an hour to cool before serving.  this was the perfect side dish to our balsamic salmon!

  1. Laura this looks so good and healthy and your salmon looked gorgeous. I cooked salmon once and it must not have been good, but it made my house smell so incredibly bad I have never eaten it or cooked it again. I thought I would have to sell my house lol. I may give it another chance. Thanks

    • You should definitely give it another chance! Another thing I do is put the salmon and other ingredients in tin foil to keep the smell contained. It helps :)
