honey chipotle bbq chicken

6 bone-in chicken thighs

2 tsp olive oil

1/4 minced shallots (or red onion if you have that)

1/2 cup low sodium ketchup

2 tbsp water

2 tsp honey

3 tsp apple cider vinegar

3 tbsp adobo sauce (i bought chipotles in adobo sauce and used the sauce in the can plus on chopped chipotle)

1/2 tsp dry mustard

1/2 tsp chile powder

1/2 tsp salt

1/2 tsp garlic powder

1/2 tsp black pepper

cooking spray

preheat grill to medium heat.  in a sauce pan, add olive oil and swirl pan to coat.  add shallots and sauté for 2-3 minutes.  stir in ketchup, water, honey, vinegar, adobo sauce, chipotle, and chili powder.  reduce heat to low and cook for 5 minutes,  stirring occasionally.   set aside.  in a small bowl, combine salt, garlic powder, and black pepper,  sprinkle over uncooked chicken.  spray cooking spray on grill to prevent chicken sticking.  place chicken on grill and cook for about 15 minutes on each side.  once there are grill marks on both sides, baste chicken generously with sauce (while still on grill).  then turn over and repeat on other side for another minute.  save some sauce to serve on top when serving.  this was the perfect summer entree!  we served with a fresh caesar salad and grilled corn!




  1. Like the sound of it but I never heard of adobo sauce, what is it?

    • Hi! Adobo sauce is a mexican hot sauce! It is usually made of chili peppers, garlic and vinegar. Chipotles are canned in adobo sauce in the grocery stores so that is when I normally buy it! It is very spicy but add a really nice kick to any meal. Thanks for stopping by!

  3. I love the idea of homemade bbq sauce. This one sounds great! I always pick thighs over chicken breast! :) Great recipe.

    • Hi! I personally pick breast of over thighs to be honest but I figured I would try something new this time and surprising really liked it! I will definitely be cooking with thighs more often! Thanks for stopping by!
