bacon, avocado and corn salad

5 strips thick-cut bacon
6 large ears corn, husks and silks removed
1/2 cup crumbled feta
2 tablespoons chopped fresh cilantro
juice of 1 lime
1 large Hass avocado
coarse salt and freshly ground pepper, to taste

heat skillet to medium heat.  cook bacon on both sides until crispy (about 6 minutes).  place aside.  keep grease in skillet because you will use that to sauté the corn in.  cut the kernels off the corn and add to the skillet.  sauté under corn is slightly brown, about 5 minutes.  remove from heat and add feta, cilantro, lime, salt and pepper and let cool.  crumble bacon strips and mix in.  right before serving, add chopped avocado so it does not turn brown (i learned this the hard way :) ).
