twice baked potatoes

mom’s recipe

5 russet potatoes (or 1 for each person you are cooking for)

3/4 cup 2% milk

1/2 sour cream

4 tbsp of room temperature butter (half a stick)

1 cup shredded cheddar cheese

4 strips of cooked crumbled bacon

3 tbsp chopped fresh chives

1 tsp red pepper

salt and pepper

preheat oven to 375 degrees.  wash potatoes throughly.  take a fork and poke a few holes in the top of each potato.  bake for 45 minutes to an hour, until the potatoes are cooked all the way through.  take potatoes out of the oven and cut a whole in the top of the potato.  with a spoon, scoop out all of the potato inside into a mixing bowl just leaving the skin.  do this for all potatoes.  in the mixing bowl with the potato insides, add milk, butter, sour cream, cheese, chives, red pepper and salt and pepper.  i used a kitchen aid mixer to combine ingredients to create a fluffy mixture, but a hand held mixer or spoon works as well.  once throughly combined, fold in half of the crumbled bacon.  if the mixture looks a little stiff, you can add more milk to loosen it up.  take mixture and scoop back into potato skins.  top each potato with a little extra cheese and bacon.  place back in oven for 15 to 20 minutes until potatoes are heated all the way through.  enjoy with a nice steak and grilled veggies!
