maple bourbon hushpuppies

my own recipe


2 cup cornmeal

3 tbsp self rising flour

1/4 cup diced onion

1/4 cup diced green pepper

3/4 cup milk

1/4 cup maple bourbon

1 egg

salt and pepper

vegetable oil for frying

in a deep skillet, heat 2-3 inches of vegetable oil to 375 degrees.  in a mixing bowl, combine cornmeal, flour, onion, and green pepper.  stir until incorporated.  add milk, bourbon, egg, salt and pepper.  stir until throughly mixed. if the batter is too thick, add a little more milk (or bourbon :) ). using a table spoon, drop spoon fulls of batter into oil.  place 4 to 5 in the skillet at a time.  fry on each side until golden brown, about 4 to 5 minutes total for each batch.  the perfect side dish to the garlic parmesan baked oysters and the other seafood from our feast i will be posting!
