lightly fried shrimp

mom’s recipe


2 cups flour

2 eggs

1/2 cup milk

2 cups breadcrumbs

salt and pepper

2 1/2 to 3 inches of vegetable oil

1 pound fresh shrimp (we bought head and shell on but you can buy already peeled and cleaned shrimp!)

in a large sauce pan, heat oil to about 350 degrees.  start by taking the heads off the shrimp and peeling them.  then butterfly the shrimp and take out the vain.  prepare 3 bowls.  the first bowl with flour, salt and pepper.  second bowl with eggs and milk, whisked together.  and third bowl with breadcrumbs.  take each shrimp, dip in flour mixture, then egg mixture and then breadcrumb mixture.  drop shrimp in oil and fry until golden brown.  add about 4 to 5 shrimp at a time because you don’t want to over crowd the pot!  serve with the cocktail sauce that can be found with the raw oyster recipe !
