roasted brussels sprouts and asparagus with garlic aioli

20 brussels sprouts cut into halves

10 spears of asparagus

2 tbsp olive oil

1 tbsp red wine vinegar

dash salt & pepper

aioli:

2 tbsp mayonnaise

4 tbsp plain yogurt

1/4 tsp minced garlic

1 tsp lemon juice

1 tbsp finely chopped parsley

1 tsp red pepper flakes

preheat oven to 400 degree.  cut ends off of the asparagus and chop into 3s.  line a baking dish with foil and place brussels sprouts and asparagus on sheet.  pour olive oil, red wine vinegar, salt and pepper over top and toss together.  bake in oven for 15 minutes.  while sprouts and asparagus are baking, you can begin on the aioli.  combine all ingredients until throughly mixed and place in refrigerator to cool.  serve as a dipping sauce! thanks again to meghan for the inspiration!
