mexican stuffed shells

my own recipe

2 cooked boneless skinless chicken breast, shredded

1 can drained black beans

1 can drain sweet corn

6 green onion sprigs, chopped

6 ounces cream cheese, softened

1/4 cup chicken broth

1 1/2 cup cheddar cheese, shredded

1 1/2 cup picante sauce

1 tbsp chili powder

salt and pepper

box of large pasta shells

pre heat oven to 350 degrees.  in a pot, bring water to a boil and boil chicken until cooked for about 25-25 minutes.   drain chicken and place in food processor to create a fine texture.  place in mixing bowl and set aside.  in another pot, bring salted water to a boil and cook pasta shells for about 10-12 minutes.  you want the shells to be soft enough to bite into but not too soft because they will break when stuffing.  in the mixing bowl with the chicken, add chicken broth, cream cheese and 1/2 cup picante sauce and mix until incorporated.  Add green onions, black beans, corn, chili powder, 1 cup cheddar cheese, salt and pepper.  mix until throughly combined.  take a baking dish and spray with cooking spray.  our another 1/2 cup of picante sauce in the bottom of the baking dish and spread to coat bottom.  when shells are done, drain and begin to stuff with chicken mixture.  use a generous portion with stuffing the shells.  place shells in baking dish and top with the last 1/2 cup picante sauce and 1/2 of shredded cheddar cheese.  bake for 25 minutes and enjoy!
