poppyseed chicken salad

chicken salad:

1 head of cabbage

2 packages of boneless skinless chicken breast, chopped

3 packages of ramen noodles (only noodles, can disregard seasoning)

1 red and 1 green pepper

3 stalks of celery

chop all ingredients finely and mix together in a large bowl.  set aside and make dressing.

poppyseed dressing:

1/2 cup sugar

1 tsp mustard

1 1/1 tsp salt

1/3 cup apple cider vinegar

1 cup vegetable oil

3 tbsp poppy seeds

combine sugar, mustard, salt and apple cider vinegar and blend together well with a mixer.  add oil slowly will beating on low.  stir in poppy seeds.  pour dressing over salad mixture and let sit for 24 hours so the ramen noodles can absorb the dressing and become soft.  enjoy this healthy summer salad!
