spaghetti squash caprese bake

1 large spaghetti squash

2 cloves of garlic, minced

4 roma tomatoes

1/4 cup fresh basil (small handful)

2 cups fresh baby spinach

2 tbsp extra virgin olive oil

2 cup mozzarella cheese

salt and pepper

preheat oven to 375.  pierce squash with a sharp knife several times.  bake on a baking sheet for 1 hour and 20 minutes.  flip squash half way through so it evenly cooks.

once the squash is cooked, halve the squash lengthwise. scoop out the seeds and gooey bits and throw those away. scrape the remaining flesh of the squash with a fork to get out all of the spaghetti noodles. place in a bowl and set aside.

in a separate bowl, add minced garlic.  roughly chop the spinach and basil and add.  cut the tomatoes into bite size pieces and also add to bowl.  pour olive oil over this mixture and stir well.

add spaghetti squash to mixture and 1 cup of the mozzarella cheese to this spinach mixture and stir until well incorporated.

spray a thin baking dish with cooking spray and add mixture to dish.

cover the mixture with the remaining mozzarella cheese.

bake for 35 minutes at 375 and enjoy!

  2. What a wonderful recipe. I have always wanted to make spaghetti squash and your recipe has encouraged me to do so.

    • Yay!! I thought it was going to be so scary at first but it is so easy. You literally put it in the oven and it does the rest! Please let me know if you give it a shot!
