eggplant, spinach and onion quinoa
my own recipe
i created this recipe last night just using the ingredients i had on hand! you can use any vegetables you have for different variations!
1 cup uncooked quinoa
2 cups water (or chicken broth)
1 tbsp chicken bouillon (i used this in the water because i did not have chicken broth so omit if you are using broth)
2 cups uncooked spinach
1 eggplant, peeled and sliced
1 tsp garlic
1/2 onion, sliced
2 tbsp olive oil
salt and pepper to taste
in a small pot, add quinoa, water and chicken bouillon (or chicken broth) and bring to a boil. once boiling, turn heat to low and cover for 20 minutes. while quinoa is cooking, bring a sauce pan to medium heat. add olive oil and garlic and stir together. add eggplant and onion. sprinkle with salt and pepper. cook for about 10 minutes stirring constantly. once eggplant looks soft and onions are translucent, add spinach. cook until spinach is wilted, about 2 minutes. remove from heat. when quinoa is finished, add the eggplant mixture to the quinoa and mix together. add a little more salt and pepper and enjoy these easy, quick dinner!
