blueberry pie

mom’s recipe


3/4 cup white sugar

3 tbsp cornstarch

1/4 tsp salt

1/2 tsp ground cinnamon

4 cups blueberries (2 cartons)

1 package of pie crust

1 tbsp butter, diced

preheat oven to 425 degrees.   in a bowl, mix first 5 ingredients and let sit for about 30 minutes.  line pie plate with 1 pie crust.  pour mixture into pie crust and dot with butter (meaning scatter pieces of diced butter on mixture).  take the other pie crust and cut into 1/2 inch strips with a pizza cutter.  weave over the top like lattice and press edges with a fork.  if the strips fall over the side, just break them off.  spray foil with cooking spray and cover pie.  make sure the foil covers the edges of the pie crust so it doesn’t burn.  bake for 35 minutes covered, then remove foil and bake for 15 more minutes (50 minutes total).  enjoy with a scoop of homemade vanilla ice cream!
