2 thin chicken breasts, boneless and skinless
1 cup flour
1 cup panko crumbs
1/2 cup mozzarella cheese
1 roma tomato, diced
1/2 jalapeño, diced
2 tbsp chopped onion
2 tbsp lime juice
1 tsp parsley
salt and pepper
preheat oven to 350 degrees. line a baking dish with foil so chicken will not stick. prepare 3 separate bowls: 1 with flour, 1 with the 2 eggs, lightly beaten, and 1 with the panko bread crumbs. take each chicken breast and coat in flour and then in egg mixture. repeat these 2 steps then after the second egg dipping, coat in panko bread crumbs and place in lined baking sheet. bake in oven for 20 minutes.
while chicken is cooking, make the topping. in a bowl, combine all ingredients under the topping and mixture together well. set aside.
when 20 minutes is up, remove chicken from oven and turn oven off. place 1/4 a cup of mozzarella on each of the chicken breast. place back in the oven for about 3 minutes until cheese has melted.
remove chicken from oven and serve on plate with margarita topping on top. enjoy this very healthy delicious meal!
