shrimp poppyseed salad

my own recipe


1 16 oz package frozen shrimp

1 package of spinach/romaine mixture lettuce (you can use whatever you have on hand)

1 can garbonzo beans

1/4 cup chopped red onion

1 large tomato, chopped

1/2 cup parmesan cheese

1 tbsp red pepper

1 tbsp garlic powder

1 tsp poppyseeds

3/4 cup poppyseed dressing

2 tbsp olive oil

1 tbsp of each salt and pepper

heat olive oil in a skillet to medium heat.  defrost shrimp in a strainer under hot water for about 5 minutes.  in a bowl, combine red pepper, garlic powder, salt and pepper.  add shrimp to mixture and toss until all shrimp are coated.  put shrimp in skillet and cook for about 6 minutes, until pink, flipping once.  remove from heat.

start to assemble the salad.  in a  large bowl add lettuce, tomato, onion and garbonzo beans.  mix together.  then toss in poppyseeds and parmesan cheese and mix together.  lastly, pour poppyseed dressing in salad mixture and toss until all the lettuce is coated.  serve in bowls and place shrimp on top for a great presentation!
