4 bell peppers

1/4 cup quinoa, uncooked

1lb jimmy dean hot sausage (i used hot but you can use whatever!)

1 can kidney beans, drained

1/4 cup onion, chopped

2 chipotles (i buy the can with chipotles in adobe sauce)

3/4 cup parmesan cheese

1 tbsp butter

1 tbsp flour

1/4 cup milk

dash salt and pepper

preheat oven to 375 degrees.  spray a cookie sheet with cooking oil.  cook quinoa based on package instructions.  it should be 2:1 ratio of water to quinoa.  while quinoa is cooking, start to brown sausage in skillet.  once sausage is cooked, about 5 minutes, then add onion, beans, and chipotles and heat for 2-3 more minutes and remove from heat.  in a large pot, bring water to a boil and blanch peppers for about 5 minutes.  drain peppers.  cut a hole in the top of the peppers, remove the top and stuff each pepper with the sausage mixture.  using the same skillet you cooked the sausage in without rinsing add butter and melt.  stir in flour to create a roux with sausage drippings and butter.  once roux is clumpy, add milk, bring to a boil, then simmer until thick.  add 1/2 cup of cheese to milk mixture.  add salt and pepper.  then pour the cheese sauce on top of each pepper so the sauce sinks down through the stuffing.  top with the 1/3 of cheese that is left and bake in oven for 10 minutes until cheese on top is melted.  enjoy these spicy, yummy peppers!
