turkey black bean enchiladas

1 lb  lean ground turkey
1 can of chipolte enchilada sauce
1 can black beans, drained and rinsed
1 small can chopped green chilis
2 cloves garlic
1/4 cup chopped onion
1/4 cup chopped cilantro
2 tsp chili powder
salt and pepper
8 whole wheat flour tortillas
1 cup reduced fat shredded mexican cheese
1 can diced tomatoes

for sauce, just pour can of enchilada sauce into a sauce pan and warm on stove.  in a large skillet, brown the turkey meat and season with salt and pepper.  add the onion, garlic, black beans, cilantro, green chilis, diced tomatoes and chili powder.  mix well and simmer on low about 20 minutes. preheat the oven to 400 degrees.  spray 9×13 with non stick spray. to assemble, put a 1/2 cup turkey mixture into each tortilla and roll up.  place with the seam down in your 9×13. top with enchilada sauce and cheese and cover with aluminum foil and bake for 20-25 minutes. to serve, top with low fat sour cream or any of your other favorite topping!
