shrimp quinoa bowl

my own recipe

shrimp and quinoa:

1/2 pound cooked mini shrimp
1/3 cup red onion, chopped
1 frozen package of edamame
2 cup dry quinoa
1 avocado, chopped
1 cup canned black beans, rinsed and drained
1 can of unsalted corn
1/3 cup cilantro, chopped
salt & pepper


1/4 cup orange juice
2 lemons, juiced
2 garlic cloves, finely chopped
dash of sweetener (2 packets of splenda)
salt & pepper
6 tbsp extra virgin olive oil

saute shirmp in skillet with any of your favorite seasonings.  (i used cayanne pepper, garlic powder, salt and pepper). cook quinoa according to package directions. set aside to cool.  for the vinaigrette, combine all ingredients in a bowl and whisk to combine.   combine cooled quinoa with red onion, edamame, avocado, beans, corn, cilantro, salt and pepper. pour vinaigrette over the salad and stir to combine.  place shrimp on top of salad a serve!  the perfect meal for clean eating!
