  • 1 1/2 cups flour
  • 3 eggs
  • 2 green onion springs, diced
  • 1 can sweet corn, drained
  • 1 jalepeno, finely chopped
  • 3 tbsp coriander
  • 3 avocados
  • juice of one lime
  • 1/2 cup vegetable oil
  • salt and pepper

 

whisk together the flour and eggs, and then add the chopped green onions, corn, jalapeno, coriander, salt and pepper. mix to combine.  dice avocados, and add it to the mixture along with lime juice and stir gently until well mixed.  heat the oil in a frying pan.  with a spoon, scoop a spoon full of the mixture into the oil and flatten the clump out slightly.  i repeated 4 times per batch (you dont want to over crowd the pan).  I ended up with 3 batches.   cook over a medium-low heat for around 5 minutes, until golden brown on each side. serve immediately.  *next time, i want to make an avocado sauce to pour on top!

  1. These are a tad different (in a good way). Something like a shredded chicken in like a southwest style marinade/sauce would go great over the top of these, hmm…

  4. Wow this is interesting. I’ve gotta try it sometime. I’m in South Texas and we used to have restaurant that served batter fried avocado slices with spicy dip as an appetizer. Warm avo isn’t bad at all and I bet it’s really good with corn. Thanks for sharing.
