honey jalapeño chicken

1/4 cup honey

1/4 soy sauce

2 tbsp olive oil

1 tbsp garlic, minced

juice of 1 lime

1 jalapeño, seeded and sliced in rings

1/4 yellow onion, chopped

salt and pepper

6 chicken thighs

in a bowl, combine all ingredients besides chicken and mix well until combined.  place chicken thighs in a large ziplock bag and pour marinade into the bag.  massage the chicken so it is all coated in the marinade and let sit of 30 minutes.  heat grill to medium heat.  place chicken on grill and cook on that side for 10-12 minutes.  flip chicken and cook on the other side for 10-12 minutes as well.  once you flip the chicken, brush with the marinade and scoop the jalapeños and onion on top of the chicken so they get soft.  once cooked, serve while warm!
