butternut squash and sausage stuffed shells

1 butternut squash, peeled and cubed

1 lb sausage

1 cup spinach

1 yellow onion, diced

1 box jumbo shells

1 cup ricotta

1/4 cup parmesan cheese

juice of 1/2 of a lemon

2 tbsp basil

salt & pepper

preheat oven to 350 degrees.  bring a pot of water to boil.  add butternut squash and cook until fork-tender (about 2o/25 minutes).  meanwhile, over medium-high heat, saute sausage in a skillet with onion.  when sausage is mostly browned, add spinach. cook until spinach is wilted and remove from heat.   drain butternut squash and place in a bowl.  with a fork, mush the squash until it is a chunky puree.  drain the sausage mixture and to squash.   add ricotta, lemon juice, basil, salt and pepper to mixture and combine.  fill each shell with the filling.  arrange stuffed shells in a 9×13 sprayed baking dish. bake for 25-30 minutes.  top with basil and parmesan cheese!

    I made this tonight but used shredded summer and pattypan squash so I could use seasonal veggies. It turned out perfectly and saved a few steps, just shredding the squash and adding it
    To the ricotta. I will be adding this to my recipe box- thanks !
