smashed loaded red potatoes

8 small red potatoes

3 tbsp olive oil

1 advocado, diced

4 strips of cooked bacon, chopped

1/4 cup shredded cheddar cheese

2 green onion sprigs, chopped

salt and pepper

preheat oven to 350 degrees.  wash potatoes and place on a big baking cookie sheet.  pour olive oil on potatoes and make sure each potato is coated.  sprinkle each potato with salt and pepper and bake them for about 45 minutes until fork tender.  when potatoes are done, remove from oven.  smash each potato with a flat utensil ( i used a flat wooden spatula but you can use whatever you have).  when potatoes are smashed, top each potato with cheese, bacon, green onions, and advocado.  serve with sour cream if you would like!
