balsamic shrimp & grits
my own recipe

1 lb shrimp
1/8 cup balsamic vinegar
1/8 cup white wine
1 tomato, chopped
1 tsp garlic powder
salt and pepper

heat skillet to medium heat.  add shrimp, garlic powder, salt and pepper.  toss shrimp for about a minute.  add balsamic vinegar, white wine, and tomato to shrimp and cook until tomatoes are soft and shrimp is pink.  the alcohol in the wine will reduce while shrimp is cooking. place aside until grits is done.

for grits

2 cups half and half
1/2 cup stone-ground grits
1 tbsp butter
1/4 parmesan cheese
salt and pepper

in a sauce pan, add half and half and salt and bring to a boil.  add grits, stirring to combine and let simmer for about 20 minutes until thick and creamy.  remove grits from heat and add butter, cheese and pepper. stir until cheese is melted.

to serve, place a serving of grits on each plate and spoon shrimp mixture on top.  the PERFECT summer beach meal!
