parmesan zucchini chip

my own recipe

2 zucchinis, sliced

1 cup flour

3 eggs

1 cup panko bread crumbs

1/2 cup parmesan cheese

1 cup canola oil

salt and pepper

heat oil in skillet on medium heat.  place flour, eggs and bread crumbs in three separate bowls.  add parmesan cheese, salt and pepper to bread crumbs and mix together.

take about 8 zucchini slices at a time, place in flour, then egg, then bread crumb mixture and place into skillet.  fry on each side for 2 minutes.  remove from oil and set a side to train sprinkling with salt immediately.  enjoy!
