grilled salmon with tuscan tomato relish

6 ripe roma tomatoes, diced

1 glove garlic, minced

1/2 cup extra virgin olive oil

3/4 cup lemon juice

3 tbsp fresh chopped oregano

4 filets of salmon

1 package quinoa blend

heat grill pan on stove to medium heat.  mix first 5 ingredients together and let sit at room temperature for 1 hour.  then refrigerate until ready to serve.  season salmon with salt and pepper and wrap each filet in foil.  place on grill pan until salmon is cooked through, about 12-15min.  cook quinoa blend based on box directions.  serve quinoa with salmon filet topped with tuscan tomato salsa.

  4. It tastes great! Red quinoa is my favorite so I used that one instead but all together is very good.
