cream cheese:
  • 4 oz cream cheese, softened
  • 3 tbsp sugar
  • 1/4 tsp almond flavor
  • 1 tsp pumpkin pie spice
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup apple juice
  • 1/4 cup vegetable oil
  • 3 eggs
  • 1 tsp almond flavor
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 2 1/2 tsp pumpkin pie spice
  • 1/4 confectioners sugar

pre heat over to 350 degrees.  in a bowl combine the cream cheese, sugar, almond flavoring and pumpkin pie spice. beat until light and fluffy and set aside in the fridge. in a large bowl, combine the sugars, pumpkin, apple juice and oil.  add the eggs and almond flavoring and stir to combine.  add the remaining dry ingredients to the bowl and mix until fully incorporated. spray muffin tins very heavily with cooking spray.  pour a spoon full of batter into each space.  drop a tsp of cream cheese mixture on top.  bake for 25 minutes or until a toothpick comes out clean.  let muffins cool and then sprinkle with confectioners sugar.  the perfect treat for the beginning of fall!
