hazelnut coffee chocolate chip cookies

my own recipe


1 1/2 cups rolled oats

1 cup & 2 tbsp flour

1 stick butter

2 tbsp ground hazelnut coffee

1 cup brown sugar

1 egg and 1 egg yolk

1/2 tsp baking soda

1/2 tsp salt

1 tsp vanilla

1/2 cup mini chocolate chips

preheat oven to 325 degrees.  in a bowl, melt butter and set aside.  in a large bowl, stir together oats, flour, coffee, baking soda, and salt.  add butter to mixture and incorporate well with wooden spoon.  add eggs and vanilla to mixture until combined.  lastly, add chocolate chips and mix together.  grease two baking dishes (yields about 20 cookies) and using an ice cream scoop, scoop balls of the cookie dough onto the baking dishes.  bake for 11-13 minutes until bottom are golden brown.  i came up with this recipe last night when i forgot to buy pumpkin at the store and needed an sweet to bring to work!
