chicken and corn jambalaya

my own recipe


1 box of zatarain’s jambalaya mix

1/2 can sweet corn

3 boneless skinless chicken breasts

1/2 white onion, diced

2 tbsp olive oil

1 tsp chili powder

1 tsp onion powder

1 tsp coriander

salt and pepper

for rice, follow directions on box.  heat a skillet with olive oil to medium heat.  season chicken breast with chili powder, onion powder, coriander, salt and pepper.  add seasoned chicken and diced onions to skillet and cook for about 8 to 9 minutes on each side until chicken is cooked through.  when chicken is done, remove from skillet and cut into bite sizes pieces. add back to pan to keep warm.  when rice is finished, add corn, cut chicken and sauteed onions to mixture.  let sit for about 5 minutes and serve.  the EASIEST dish i have made in a while!

    • It was super easy! This was a recipe that happened when we didn’t feel like going to the grocery store and made do with what we had. It turned out pretty good! Thanks for checking out my blog!

  2. Corn and Jambalaya? Never thought of that, but it sounds like a nice idea! But I imagine the sweet corn and the spices play against each other quite well!
