20 large mushrooms, rinsed with patted dry

2 links hot Italian sausage

2 springs of fresh rosemary

1/2 yellow onion, diced

1 tsp minced garlic

4 ounces of cream cheese, softened

1/2 cup Asiago cheese

3 tbsp. olive oil

3 tbsp. balsamic vinegar

salt and pepper

preheat oven to 350 degrees.  cut stems off mushrooms and scoop out the middle so it creates a mini bowl.  in a bowl, toss mushrooms with olive oil, balsamic vinegar, and salt and pepper.  pour onto a wax paper lined baking sheet and cook mushrooms for 30m mins.

while mushrooms are cooking, heat a large skillet to medium heat.  squeeze sausage out of casing and cook until no longer pink.  you want to break it apart so it is in small pieces.  stir in onions, garlic and herbs.  cook until onions are soft and remove from heat.  in a bowl, combine sausage mixture with cream cheese and asiago cheese (save some cheese for topping).

take mushrooms out of oven and spoon sausage mixture into each mushroom “bowl.” bake mushrooms for 30-40 minutes.
