asian shrimp quinoa

for qunioa

2 cups quinoa

4 cups chicken broth

1/2 package of shredded carrots

3 sprigs green onion

1 orange bell pepper, chopped

1 medium onion, diced

1/4 soy sauce

heat chicken broth with quinoa on a stove top until boiling.  once boiling, turn to a simmer and cover for about 20 minutes. meanwhile, chop all vegetables for the quinoa and set aside.  once quinoa is done, pour into bowl, add veggies and soy sauce and mix together.  put quinoa mixture in the refrigerator to cool.

for shrimp

1lb shrimp

1/2 cup soy sauce

1/4 cup balsamic vinegar

1/4 cup agave (or honey)

1 tbsp. garlic

salt and pepper

in a bowl, combine all ingredients for shrimp and mix together.  add shrimp to marinade and let sit for about 30 minutes.  heat a sauce pan to low heat and pour shrimp and marinade into pan and cook for about 4 minutes until shrimp is pink.  (I added some cooked chicken to the mixture as well for a friend that doesn’t care for shrimp!)

to serve, scoop quinoa into a bowl and then shrimp mixture on top with some sauce from the shrimp.  add more soy sauce if needed! enjoy!!
