sweet potato hush puppies

my own recipe


1 sweet potato, roughly diced

1 white onion, diced

1 1/2 cup cornmeal

3/4 self rising flour

2 tbsp sugar

1 egg

1 cup buttermilk

tsp red pepper

hand full of fresh parsley

salt & pepper

heat fryer to high heat (i filled the fryer with 6 cups of canola oil) .  fill a steamer or sauce pan with about 2/3 cups of water and bring to a boil.  add but sweet potatoes and cook until fork tender.  meanwhile, in a bowl, mix together cornmeal, flour, sugar, salt and pepper.  add diced onion and stir in.  in a small separate bowl, lightly whisk the egg and add buttermilk.  add wet mixture to dry mixture and let sit for about 10 minutes.  drain the sweet potatoes and mash up using a wooden spoon.  add to the hush puppy mixture and stir until incorporated.


using a spoon, scoop a spoon full of the mixture and drop it into the fryer.  repeat about 4 or 5 times depending on the size of the fryer.  you will have do about 5 or 6 batches.  after each batch, sprinkle with salt, pepper, and a tiny bit of red pepper for some heat (you can leave out if you like!).  top with fresh parsley and serve with any type of dipping sauce you prefer!

  3. It’s probably a good thing that I don’t have a deep fryer or I’d be using it every day…but gosh, these look SO good! I love that you used sweet potatoes here.
