IMG_8664 2 large chicken breasts (cut in 1/2)
2 tbsp butter
1 cup chicken broth
1/2 cup half & half
1/4 cup grated parmesan
1 tbsp minced garlic
juice of 1 lemon
1 tsp smoked paprika
1 tsp dried thyme
2 cups spinach
salt & pepper

preheat oven to 400 degrees. season chicken with paprika, salt, and pepper.  melt the butter in a skillet (that you are able to put in the oven).  add chicken and brown on each side for about 3 minutes each.  remove the chicken and drain some of the fat.

in the same skillet, add garlic and cook until brown (2 minutes or so).  stir in chicken broth, half & half, parmesan, lemon juice, and thyme.  bring to a boil.  once boiling, add spinach and then lower to a simmer until the sauce has thickened (about 5 minutes).

place chicken back in the skillet and the put in the oven for about 15 minutes or until the chicken is cooked all the way through.

side note: after we plated the chicken, we poured the extra juice in a bowl and it made for a great dipping sauce for our bread!
